We are looking for a mature, experienced, qualified and reliable Head of Pastry Production with an immediate start, to lead our pastry team at our production kitchen in Alexandria. We are an award winning artisan gluten-free bakery with Cafes in Alexandria, CBD and Waverley. Our very busy HACCP certified bakery operates 7 days a week for take away, online orders, deliveries, catering, wholesale and more. Accredited by Coeliac Australia, our range of innovative premium sweet and savoury products are hand-made with fresh seasonal ingredients.
You will be responsible for effective planning, directing, and management of
- pastry
- operations. This will be achieved by implementing clear strategies that complement the business objectives, utilising your leadership, creativity and commitment to quality for our customer-first focus.
You will possess excellent communication, forward planning skills and have a proven culinary foundation. We are looking for a dynamic leader with experience in a high volume facility, who thrives in a fast-paced and constantly changing environment, and has a strong background in leading a team.

Main Tasks and ResponsibilitiesPlanning and managing pastry operations from production to dispatchCollaborate with the business leadership team to develop and implement seasonal pastry menusBe a hands-on manager who will coach, support, mentor, and lead a teamDeliver consistent quality within a high-volume fast-paced environment, on time with a high attention to detailEnsure labour is well controlled and forecast as per budgetDetermine, implement and monitor production strategies and planning. Review output and costs, and adjust processes and resources to minimise costs / wastage.In conjunction with QA team ensure HACCP practices are maintained by ensuring food safety standards are metManage relationships with internal and external stakeholders to deliver production KPIsExperience and QualificationsCert III in Patisserie or higherFood safety supervisor certificationExperience as Head Pastry Chef / Executive Pastry Chef / Head of Production ideally from a food manufacturing environment or large scale kitchen.Knowledge of catering to dietary requirements including gluten-free, dairy-free and vegan.Excellent written and verbal communication skills.Exemplary leadership skills with focus on staff development and building relationships.A strong understanding of workforce planning.Knowledge of HACCP (or equivalent) principals.
