Location of our cafes are in Perth and one in Singleton WA.They are a well-established business in Perth with over 150 employees.
All of the key staff are of long serving, which shows an honest and successful company.COOK TasksThe successful applicant will have the ability to do the following : Clean food preparation areas as determined by law and Lawley's company policyPrepare foods to the specifications for Lawley's menus and customersAdjusts food items to accommodate guests with allergies or specific diet concernsWorks and at time direct other employees in the kitchen under chefActs as liaison to front-of-house employees to ensure proper food service temperatureWork / use seasonal food according to recipes or company needsOrders ingredients as needed in consultation with chefOperates various kitchen appliance such as a blender, oven, grill, or fryer.Portions, arranges, and garnishes food based on customer / menu preferenceWorks alongside other cooks during the food assembly processCreating new recipes with chef's, café managers and directors approvalEstimates expected food consumption and organises preparation along with chefKeeps records and accounts of food purchasesOrders new menu itemsMeets with customers to ensure a great meal experience if complaints arise and café manager is not availablePrepares any necessary sauces or accompaniments before meal service beginsResponsible for cleaning of kitchen area and any equipment used within the shiftCommunicates with Head Chef / Café Manager on how to improve meal serviceEnsuring all food is stored in temperature-controlled facilities, fridges, cool rooms etc.
according to Australian Health StandardsResponsibilitiesYou are responsible for all cook Kitchen duties and cleanliness of KitchenWorking with trainees and all kitchen paperwork is up to dateFood Standards are always adhered to.Hygiene is of a high standard both personally and within the kitchen.Safe work practices are always followed.Reporting any faults or issues of equipment immediately to the cafe manager.CHEF Tasks : Supervises cooks in the Lawley cafes as well as kitchen staff and all food service staff.Menu development and planning carried out together with directors and management in head office.With menu planning, estimates food and labour costs.
Orders ingredients in bulk to reduce costs and controls the distribution to the Lawleys Cafes if necessaryEnsures the quality of the menu and display food items are maintained at a high level through all stages from preparation to presentation.Depending on ingredient availability, may freeze and preserve foods.Performs preparation of food and cooks menus items either as training or substituting an absent staff member.Holds regular meetings with staff to enforce and maintain Health & Safety standards in all stores and the main kitchen.Trains cooks and junior staff in the main kitchen and cafes in all aspects of cooking and food preparations ensuring presentation of food is of a high standardAdvises and trains cooks and staff on new techniques and cooking procedures.Enforces, encourages, and explains where necessary where hygiene regulations need to be kept to the required standard.Deals with issues arising during food preparation and works with the managers, kitchen and serving staff to overcome them.Recruits new staff for the store kitchens and main kitchen.Keeps within the given kitchen and catering budget by constantly estimating food and labour costs.Implements and trains staff ordering procedures for the required food supplies.Ensures all kitchens are HSE compliant and maintains an active safe kitchen environment with all employees.Leads by example and ensures the correct equipment and PPE are worn at all times.Trains all kitchen staff on Health & safety.Responsible to ensure every part of the store and main kitchens, store dining areas, foods preparation & storage areas are always clean and safe.CHEF Responsibilities : Planning menus, estimating food and labour costs, and ordering food suppliesMonitoring quality of dishes at all stages of preparation and presentationDiscussing food preparation issues with Managers, Dietitians and kitchen and waiting staffDemonstrating techniques and advising on cooking proceduresPreparing and cooking foodExplaining and enforcing hygiene regulationsMay select and train staffQualificationsCOOKS need AQF Certificate IV or AQF Certificate III including at least two years of on-the-jobCHEFS need above plus Diploma in Hospitality training, Qualifications will be looked at alongside experience.Experience as COOK / CHEF1 years with qualificationsSkillsThe candidate filling the position will be expected to have the following skills : Attention to detail.Ability to multitask.Basic math.Clear verbal communication.Cleanliness and hygiene.CreativityPositive attitudeFast paced decision makingOrganisation skillsAbility to be part of a teamFollows safety practicesWork as a teamFollows menu and portion control guidelinesAll applications send to
