Overview : A Retail Food & Beverage Chef at Optus Stadium is an essential member of the casual food & beverage team, responsible for delivering exceptional hospitality to guests across general admission offerings. This role involves assisting in supervision of retail kitchen operations, ensuring high quality of product, meeting service standards, and ensuring timely execution while maintaining operational efficiency. This is a leadership position, reporting directly to the retail Sous chef.
Key Responsibilities :
1. Kitchen & Service Operations : Oversee kitchen production and service and ensure the adherence to food quality, safety, and timing standards.
2. Staff & Standards Management : Manage staff performance, ensure compliance with food safety practices, and drive continuous improvement in kitchen operations.
3. Collaboration & Efficiency : Work cross-functionally to maintain service excellence and enhance operational efficiency across departments.
Specific Duties :
1. Food Safety & Compliance : Ensure adherence to food safety standards, including documentation, corrective actions, and hazard reporting.
2. Kitchen Operations : Oversee retail food and beverage outlet setup, food production, stock management, and hygiene throughout.
3. Staff Supervision & Training : Monitor staff performance and provide training, coaching, and feedback to improve efficiency.
4. Menu & Service Efficiency : Provide feedback on menu planning to optimise customer satisfaction.
5. Customer Relations & Issue Resolution : Ability to communicate with customers and escalate any issues to management as needed.
6. Environmental & Operational Support : Ensure waste management strategy is adhered to and assist in emergencies or evacuations as required.
Qualifications & Requirements :
1. Qualifications : Minimum Certificate IV in Kitchen management or equivalent and 1 year of experience in a similar role, ideally within retail food or major event-based environments.
2. Commis Chef Potential : Open to newly qualified chefs or those with a good attitude!
3. Flexibility & Availability : Willingness to work varying hours, including early mornings and game-day shifts, with a commitment to seasonal work (5 days a week).
4. Food Safety Knowledge : Strong understanding of HACCP procedures and food safety standards.
5. High-Volume Experience : Experience leading kitchen operations in high-volume, fast-paced environments. (not essential but preferred)

Additional Information :
Interviews for the Retail F&B Chef position will be held in person. Shortlisted candidates will receive a calendar invite. The role emphasises food safety and requires adherence to high standards in food production. This seasonal position requires availability for five days a week, including all major event days, focusing on preparation for events.
