Adina Sydney Darling Harbour is reopening following a full refurbishment, a premium apartment hotel in one of Sydney’s most vibrant waterfront locations.

Located on King Street Wharf, only a short walk from Barangaroo, the CBD and ICC, the hotel offers 114 spacious studios and apartments designed to give guests comfort, flexibility, and space to stay their own way.

At the heart of the hotel sits Shoreline Kitchen, a new all day dining concept open to guests and locals alike. A warm, relaxed space where the evenings take on a life of their own, where great drinks, skilled hands, and real hospitality come together. The bar is where the night finds its rhythm, and we’re looking for a Bartender who knows how to set it.

About the role

As a Bartender at Shoreline Kitchen, you’ll bring creativity, consistency, and genuine craft to every pour. You’ll help shape the bar offering from the ground up, contribute to cocktail development, and create the kind of guest moments people come back for.

You’ll work as part of the Shoreline Food & Beverage team, reporting to the Food & Beverage Manager. You’ll be behind the bar and in the mix, a key part of the guest experience from opening day.

What you’ll be doing

• Deliver exceptional drinks that showcase creativity, consistency, and quality. Every pour reflects your skill and pride in the craft; whether it’s a classic cocktail or something from the specials list.
• Prepare and maintain your bar station, ensuring smooth operations across every shift. Stock control, cleanliness, hygiene, and presentation standards are second nature to you.
• Engage with guests to create personalised, memorable experiences. You know how to read a guest, tell a story through a drink, and make someone feel genuinely looked after.
• Collaborate with the team to develop and refine cocktail menus and beverage offerings. You’re curious about what’s happening in Sydney’s bar scene and bring fresh ideas to the table.
• Ensure compliance with RSA and venue policies at all times. Responsible service isn’t a checkbox, it’s a standard you hold yourself and your teammates to.

About you

You’re a skilled Bartender with a passion for mixology, Sydney’s bar scene, and creating unforgettable guest moments. You bring the same energy and craft to a Wednesday night as you do to a packed Saturday, and you love being part of a team that takes hospitality seriously.

You’ll ideally bring:

• Proven experience in quality bars, restaurants, or hotels
• A strong understanding of bar operations, drink preparation, and beverage trends
• A collaborative mindset and a genuine guest first approach
• A commitment to responsible service of alcohol and venue safety
• A flair for storytelling through drinks and a genuine love for hospitality
• Flexibility to work varied shifts, including evenings and weekends
