\nThe Role\n
\nThe Cook position at Makan requires a skilled and competent individual who can work independently and as part of a kitchen team to ensure food preparation and cooking operations are carried out efficiently and to Makan’s standards. The successful applicant will be responsible for preparing, seasoning and cooking Malaysian dishes, maintaining food quality and presentation, and ensuring compliance with food safety and hygiene requirements.\n

\nThe role requires the ability to work effectively under pressure and within time constraints, with strong knowledge of different foods, ingredients and cooking techniques.\n
\n
\nKey Responsibilities\n
\n-Prepare, season and cook authentic Malaysian dishes in accordance with Makan’s recipes, portion sizes and presentation standards.\n
\n-Prepare Malaysian curries, wok-fried noodles, rice dishes, sambals, sauces, marinades and grilled menu items.\n
\n-Complete mise en place, including preparing meats, seafood, vegetables, herbs, spices and curry pastes before service.\n
\n-Operate Makan’s woks, grills, fryers, ovens and other commercial cooking equipment.\n
\n-Regulate cooking temperatures and cooking times to maintain the flavour, texture and consistency of each dish.\n
\n-Examine ingredients to confirm their freshness, quality and suitability before preparation.\n
\n-Monitor the taste, quality and presentation of Makan’s dishes throughout service.\n
\n-Portion and plate meals consistently in accordance with Makan’s menu specifications.\n
\n-Prepare meals for customers with allergies, intolerances and other dietary requirements.\n
\n-Maintain food safety, hygiene and temperature-control standards throughout preparation and service.\n
\n-Monitor stock levels for meats, seafood, vegetables, rice, noodles, spices, sauces and other ingredients.\n
\n-Rotate stock correctly and minimise food spoilage and wastage.\n
\n-Check and store incoming food deliveries in accordance with Makan’s food-safety procedures.\n
\n-Coordinate with Makan’s kitchen team to ensure dine-in and takeaway orders are prepared accurately and efficiently.\n
\n-Clean and maintain cooking equipment, utensils and kitchen work areas.\n
\n
\nQualifications and Skills\n
\nApplicants must possess:\n
\n-AQF Certificate III including at least two years’ on-the-job training, or AQF Certificate IV or higher qualification;\n
\n-Alternatively, at least three years’ relevant experience;\n
\n-Previous experience preparing authentic Malaysian cuisine;\n
\n-Strong knowledge of food safety and hygiene;\n
\n-Excellent organisational and time management skills;\n
\n-Ability to work efficiently under pressure;\n
\n-Ability to work effectively as part of a kitchen team and communicate clearly with kitchen staff.\n
