Job description

The Trustee for HH Trust, trading as Sam’s Cali Cantina, operates a casual dining restaurant on Chapel Street in South Yarra, Victoria. The restaurant specialises in Californian street food and Mexican-inspired dishes, including tacos, burgers, fried chicken, corn ribs and plant-based options. The venue focuses on freshly prepared food, consistent quality and efficient service within a vibrant casual dining environment.

About the Role

Sam’s Cali Cantina is seeking an experienced Cook to join its kitchen team. The successful candidate will prepare and cook a range of menu items while maintaining consistent food quality, portioning and presentation and supporting efficient day-to-day kitchen operations.

Employment Type: Full-Time

Salary: $75,000 to $85,000 per annum plus Superannuation

Key Responsibilities

  1. Prepare and cook a range of Californian-inspired and Mexican-style menu items in accordance with established recipes
  2. Cook and assemble tacos, burgers, grilled and fried dishes, sides and other menu items to required quality standards
  3. Monitor cooking processes and equipment temperatures to ensure food is prepared consistently and safely
  4. Inspect ingredients and food products to ensure freshness and appropriate quality
  5. Portion, season and present dishes in accordance with established restaurant standards
  6. Prepare ingredients, sauces, fillings and accompaniments required for daily service
  7. Monitor ingredient usage and assist with stock control and food ordering requirements
  8. Store, handle and rotate food appropriately to maintain freshness and minimise wastage
  9. Maintain cleanliness and organisation of kitchen workstations, cooking equipment and food storage areas
  10. Work collaboratively with chefs and other kitchen staff to support efficient service during busy trading periods
  11. Follow food safety, hygiene and workplace health and safety requirements at all times

Candidate Requirements

  1. Relevant qualification in Commercial Cookery or a related discipline or 3 years experience in the absence of relevant qualification
  2. Minimum 1–2 years of relevant experience as a Cook in a commercial kitchen
  3. Experience preparing Mexican, Californian, American-style or similar casual dining cuisine will be highly regarded
  4. Strong knowledge of food preparation and commercial cooking techniques
  5. Ability to maintain consistent food quality, portioning and presentation
  6. Sound knowledge of food safety, hygiene and safe food-handling practices
  7. Ability to work efficiently in a fast-paced kitchen environment
  8. Strong teamwork, communication and organisational skills
