We are seeking an experienced Head Chef to lead the kitchen team at Dee Why Hotel.

\n

This is an opportunity to put your stamp on a large high-volume Northern Beaches hotel known for quality burgers, elevated pub classics, functions and events.

\n

As Head Chef you will take responsibility for the complete kitchen operation, including food quality, service delivery, team leadership, menu development, food cost, labour, purchasing, stock control and compliance.

\n

This is a full-time role based in Dee Why and would ideally suit someone who lives locally or is willing to relocate nearby.

What you’ll be doing \n

• Lead, manage and develop the kitchen team, creating a positive culture with clear standards and accountability.
\n
• Take control during busy services and ensure meals are delivered consistently, efficiently and to a high standard.
\n
• Develop seasonal menus that build on the venue’s established food identity while introducing fresh ideas.
\n
• Maintain consistent recipes, portion sizes, presentation and food quality across every service.
\n
• Manage food cost, labour, purchasing, ordering, inventory and supplier relationships.
\n
• Complete accurate stocktakes and maintain reliable stock-on-hand records.
\n
• Ensure all menu items are properly costed and achieve appropriate margins.
\n
• Oversee kitchen cleanliness, food safety, workplace safety and regulatory compliance.
\n
• Work closely with the venue management team to improve sales, profitability and the overall customer experience.
\n
• Plan and deliver food operations for functions, events and high-volume trading periods.
\n

What we’re looking for \n

• Proven experience as a Head Chef or senior kitchen leader in a high-volume pub, hotel or comparable hospitality venue.
\n
• A genuine passion for great flavours, quality produce and creating memorable food.
\n
• Strong leadership skills and a demonstrated ability to build, motivate and retain a productive kitchen team.
\n
• The ability to remain organised and lead confidently through busy services.
\n
• Strong commercial understanding of food cost, labour management, budgeting and menu profitability.
\n
• Experience with ordering, inventory management, recipe costing and accurate stocktakes.
\n
• Excellent attention to detail and the ability to consistently deliver high-quality, visually appealing dishes.
\n
• Strong planning, time-management, problem-solving and decision-making skills.
\n
• A practical and accountable approach to kitchen administration, compliance and operational standards.
\n
