As we roll into an exciting new chapter in our 11th year, we’re hunting for a legendary Bar Manager and music-lover who thrives in a full house, leads from the front, and takes genuine pride in steering a high-performing crew until last call.

About the Role

As the Heartbreaker Bar Manager, you are the captain of the ship and the guardian of our late-night culture. You don't just run shifts; you set the tempo, direct the hustle, and ensure the room fires on all cylinders while keeping standards razor-sharp. Working alongside the venue leadership, you’ll master high-volume venue execution, drive profitability, inspire the team, and deliver electric customer experiences all night long. In this role, you will:

Drive high-volume shift execution, maintaining breakneck service speeds without sacrificing quality or accuracy.

Recruit, mentor, and train a high-octane team, building a supportive, ego-free, and cohesive crew.

Oversee stock control, cost of goods, ordering, waste management, and bar prep to keep the venue running seamlessly.

Own the energy of the room, ensuring warm, unapologetic hospitality and flawless room presentation.

Build efficient staff rosters optimised for trade fluctuations, labor targets, and late-night trade.

Enforce Victorian RSA standards, security protocols, and liquor licensing laws to maintain a safe, inclusive, and compliant environment.

About You

You’re a seasoned hospitality leader who lives for the buzz of a packed room, a great soundtrack, and a tight-knit team. You lead by example, move with purpose, and balance sharp business acumen with true rock 'n' roll grit. You bring:

Proven experience in a Bar Manager or Assistant Bar Manager role within a high-volume, fast-paced venue.

Deep operational knowledge of beverage programs, stock control, labor costs, and floor management.

Natural leadership skills with a track record of coaching and retaining top-tier bar talent.

A calm-under-fire attitude, sharp problem-solving skills, and total composure during peak late-night trade.

A valid Victorian RSA certificate, Approved Manager credentials (or willingness to obtain), and thorough knowledge of Victorian liquor licensing laws.

Full availability to work late nights, weekends, and key peak trading periods.
