About this opportunity:

We are seeking an experienced and passionate Senior Sous Chef - Production & Cutaway to join our world-class culinary team and provide senior operational leadership across ICC Sydney and The Cutaway. You will lead high-volume culinary production develop the capability of our kitchen brigade and support the successful execution of diverse and complex events. You will ensure food quality presentation safety consistency and operational efficiency are maintained while contributing to production planning labour management and continuous improvement across Culinary Operations.

• Lead the planning and execution of culinary production across ICC Sydney and The Cutaway ensuring production schedules recipes presentation standards and event timelines are achieved.
• Provide visible day-to-day leadership setting clear expectations and creating a positive respectful and accountable kitchen culture.
• Lead coach and develop Sous Chefs Junior Sous Chefs chefs and kitchen team members through regular feedback on-the-job training and capability development

Required Skills & Experience:

• Demonstrated experience leading high-volume culinary production within a hotel convention centre event venue or similarly complex hospitality environment.
• A relevant commercial cookery qualification such as a Certificate III in Commercial Cookery or equivalent industry experience.
• Proven experience leading coaching and developing a diverse culinary team in a fast-paced operational environment.
• Experience interpreting menus recipes production schedules and event requirements to deliver consistent quality at scale.
• Strong knowledge of food safety hygiene allergen management HACCP principles and safe kitchen operations.
• Sound commercial awareness including food cost labour utilisation stock control portion control yield management and waste reduction.
• The ability to lead multiple kitchen sections coordinate competing priorities and maintain quality under pressure.
• Strong planning organisation communication and stakeholder management skills.
• A proactive and solutions-focused approach with the ability to identify and implement operational improvements.
• The flexibility to work across ICC Sydney and The Cutaway and undertake day evening and weekend work including early starts and late finishes in line with event requirements.
• A genuine passion for food team development and delivering exceptional event experiences.
• Valid working rights in Australia.
• You must be 18 years or over.
