The Opportunity
We’re looking for an experienced Sushi Chef at either an experience Commis Level or CDP levelto join the DISUKO kitchen team.
You’ll work across our sushi section, preparing high-quality sushi and sashimi while maintaining the consistency, presentation and attention to detail our guests expect.
This role would suit someone with solid Japanese kitchen or sushi experience who is confident working through busy services and wants to continue building their skills within an established hospitality group.
What You'll Do
Prepare sushi, sashimi, nigiri, maki and other Japanese dishes to venue recipes and standards
Prepare and portion fish and other fresh ingredients with accuracy and care
Maintain exceptional presentation, consistency and quality across the sushi section
Complete mise en place and ensure your section is ready for service
Manage stock rotation, freshness, storage and wastage within your section
Maintain excellent food safety, hygiene and kitchen organisation standards
Work closely with the Head Chef and wider kitchen team during busy services
Support junior chefs and contribute to a positive, collaborative kitchen culture
What You’ll Bring
Previous experience as a Sushi Chef, Chef de Partie or experienced Commis Chef within a Japanese kitchen
Strong sushi preparation and knife skills
Experience working with fresh fish and raw seafood
A strong understanding of food quality, presentation and consistency
Confidence working in a high-volume, fast-paced kitchen
Strong communication and teamwork skills
Pride in your section and attention to detail
Availability to work evenings and weekends
