As we continue to grow, we are now seeking talented and experienced Restaurant Manager and Trade Waiters to join our dynamic team. 1.Restaurant Manager

  • Menu Planning : Collaborate closely with our Management team and Chefs to create refined menus that align with market trends and seasonal availability, showcasing our signature fusion of premium Australian beef and modern Italian cuisine.
  • Special Functions & Event Planning : Coordinate and manage exclusive dining experiences and special functions, thoughtfully curated to align with The 203’s premium brand, seasonal offerings, and guest expectations.
  • Procurement & Strategic Pricing : Oversee the sourcing of premium ingredients in alignment with budgetary guidelines, ensuring cost-effectiveness without compromising quality. Develop pricing strategies that reflect value, quality, and market positioning.
  • Inventory & Stock Control : Implement and monitor efficient stock control systems, including internal and external transfers. Generate detailed inventory reports and data-driven analysis for senior management to support strategic planning and minimize loss.
  • Facility & Dining Experience Oversight : Ensure that both kitchen operations and dining areas are fully compliant with health regulations, meet the highest standards of cleanliness, safety, and presentation. Guarantee that all front-of-house spaces are elegantly arranged in line with The 203’s premium standards.
  • Customer Satisfaction : Regularly engage with guests to gather feedback on their dining experience. Analyze trends in preferences and feedback to identify opportunities for elevating service and enhancing guest satisfaction.
  • Talent Acquisition : Lead the recruitment of both kitchen and front-of-house team members in collaboration with the Management team, ensuring alignment with our brand values and service excellence standards.
  • Team Training & Development : Design and maintain comprehensive operating procedures and training programs. Conduct regular assessments to identify growth opportunities and deliver in-house or external training to talent and uphold our services.
  • Daily Operations & Guest Engagement : Oversee daily service operations, including table reservations, guest welcoming, and order management. Provide hands-on support during peak periods to ensure a smooth and elevated dining experience for every guest.

Qualifications, Experience and Skills

  • A relevant Associate Degree, Advanced Diploma, or Diploma in Hospitality or Management. However, candidates with a minimum of three years of relevant industry experience will also be considered in lieu of qualifications.
  • At least 2–3 years of proven leadership experience in a premium or fine dining environment is highly desirable.

  • 2.Trade Waiter

  • Demonstrate in-depth product knowledge, including sourcing, preparation methods, and seasonal variations of menu items to elevate guest engagement
  • Set and present dining areas, tables to The 203’s highest standard, ensuring tables are immaculately arranged and service-ready before each seating
  • Manage reservations and greet guests with warmth and professionalism, creating a welcoming arrival experience
  • Present and explain menus and curated wine lists with in-depth knowledge and confidence, offering recommendations to enhance the culinary journey
  • Accurately take and process guest orders, liaising efficiently with kitchen and bar teams to ensure smooth and professional service flow. Coordinate with teams to manage special dietary requirements, and other requests with precision and discretion.
  • Serve food and beverages with precision, grace, and attention to detail, in line with fine dining etiquette
  • Open and present wine bottles, pour beverages, and mix basic cocktails as required, maintaining poise and elegance
  • Maintain table service throughout the dining experience, including clearing used items, refilling drinks, and anticipating guest needs
  • Ensure compliance with hygiene and food safety regulations, maintaining cleanliness and orderliness in your section at all times
  • Attend regular team briefings and training sessions to stay updated on menu changes, service procedures, and guest service expectations
  • Assist in processing payments, ensuring accuracy and discretion in every transaction.
  • Other related tasks as assigned during work.
  • Qualifications, Experience and Skills

  • An AQF Certificate III in Hospitality or a RTO equivalent qualification, with at least 12 months of relevant post-qualification work experience; OR Have at least 18 months of relevant hospitality experience in Australia; OR Have at least 2 years of relevant industry experience, ideally within a premium or fine dining restaurant environment or luxury hospitality environment
  • Strong knowledge of food and wine, with a particular appreciation for steak and Italian cuisine
  • Exceptional communication and interpersonal skills
  • Immaculate personal presentation and a professional, guest-focused mindset
  • Ability to work efficiently under pressure, with calm and poise
  • A team-oriented attitude with a passion for delivering memorable guest experiences
