About the role As Head Chef at FIOR, you'll work closely with Tristan, our Owner and Executive Chef, to lead the day-to-day operations of our kitchen. This full-time position is based at our Gymea location, with a 5-day workweek across a 7-day roster. You'll be responsible for overseeing all aspects of kitchen management, including menu development, staff training, and food preparation. Ensuring the high-quality, creative dishes FIOR is known for continue to shine, you'll play a key role in maintaining our reputation for excellence. What you'll be doing Lead and manage kitchen staff, ensuring smooth daily operations and high team morale. Oversee recruitment, onboarding, and rosters for kitchen staff, ensuring proper staffing at all times & adhering to wage targets. Collaborate on menu development, cost recipes, and ensure new menu changes are executed on time and to high standards. Manage daily food preparation, production, and presentation to ensure consistency & quality. Control stock, manage suppliers, and ensure all inventory procedures are followed, including stock takes and portion controls to ensure food costs targets are met or exceeded every week. Implement and uphold kitchen cleaning and maintenance standards, ensuring hygiene and safety compliance. Supervise purchasing and receiving processes, ensuring proper documentation and waste reduction. Provide feedback and coaching to kitchen staff to ensure ongoing development and team cohesion. Ensure kitchen equipment is well-maintained and that all staff are trained on proper usage. What we're looking for Proven experience as a Head Chef or Senior Sous Chef in a high-volume, elevated-dining restaurant. Someone who knows the market - how it differs from the city and what the guests want in a local restaurant. Proven track record of leading and developing a talented culinary team.
